I always make a batch of these for deer camp.
6 cups white vinegar
2 cups water
2 bay leaves
2 tblsp. sugar
1 tblsp. mustard seeds
2 tspn. salt
2 12oz. jars jalapeno peppers (hot)
1 large onion sliced
3 carrots sliced
2-3 doz. hard boiled eggs
1. Hard boil eggs & peel.
2. Bring all ingredients(except eggs) to a boil then simmer for 30 mins.
3. Put 1/4 of eggs in 1 gallon jar and pour mixture over eggs until covered. Repeat process until all eggs are in jar and completely covered by pickling ingredients.
4. Cap the jar & let stand at least 30 days or up to 1 year.
