Looks great! Maybe a dumb question but why do you put them upside down?
To seal them safely - no cool air can enter, and as the contents cool down, it will draw a vacuum seal.
That looks awesome Dom!! And it just so happens that I've got a bunch of zuchini and various peppers in my garden.....I've never tipped my canning jars upside down while cooling, but know several that people use that method. Do you boil your canning jars and rings before use?
