    Yep , thats next on my list .... Cukes are doin good , tomatoes are takeing forever to ripen , beans are plentyfull despite the rabbit plague , peppers abound and carrots are doin well . And come fall I will have a bumper crop of squashes  ;D

Eggplant tonight...I have enough zukes to attempt this...cherry/grape tomatoes rippening fast...peppers coming in quick...busy busy...

Peppers are thriveing here too , not turning red yet tho ... Maters still green as can be  :(

Yeah my red ones stayed green...yellow we very light green...not sure but they are good...

Raquette I have many questions now that I have started the Zuke Relish...why overnight to sit...?  Refrigerate while sitting?  Am I draining it all with water or just draining the natural juices over and over again...?

Ok evrerything is on track...in the 30 minute cooking process...sure smells like relish...it almost burns your eyes when you take a whiff...love it...

DOM/Dackers Zucchini Relish...Well the pics from my phone do not do this any justice but I assure you it was full of color and smells from start to finish...


Chopped the Veggies



Mixed it all in with salt to sit overnight
 


Dinner Break



Rinse and Drain, rinse and drain...



Cook it down for 30 Mins...Smells Great, burns your nose and sinuses...



Fill up the jars...and wait...

Sorry Hunt..  Im to busy riding rides..   Went on a coaster last night that really made my hands sweat bad... Going on the 120 mph 400 foot one again this morning..
