ham curing
« on: Oct 24, 2005, 11:11:09 AM »
Does anyone have a good and easy way to cure a ham (country cure) I use to take a hind 1/4 of deer to a fellow and he would cure it for me and it was great. He doesn't do it any more and all the butcher shop's around here want to do it like a city cure and that doesn't cut it.

I know of one that I use to brine turkeys before I smoke them but it is actually a ham cure. It is made by Morton and is called "Morton Sugar Cure".Comes in a blue bag and I get it at the grocery store in the spice aisle usually on the bottom shelf.
