I've never kept a heart, but have one now. Do you do anything to clean it other than rinsing with cold water?

Nope that is it, wash the clots out and slice it up and trim it well get all the white off. Fried with butter and onion my favorite meal! Wish I didnt wreck all 4 of mine :-\ wait it is fine ;D

Deer heart is the best!! I soak it in salt water, slice it up and fry. Coupled with some fried onions, potatos and scrambled eggs for breakfast - That'll put a little lead in your pencil... ;)

They have it right...best tasting treat there is. we even boil'em asap and slice off it right then and there. it gets eaten immediately because its so good.
