Lightly Season with Montreal seasoning, cover with bacon, bake until medium rare (130 or so) slice it up about  1/2" each.  Incredible!

Slice 1/2" thick. Dredge in lightly seasoned flour and egg wash. Fry in butter or bacon grease and serve with sauteed onions and bacon next to a pile of home fries.  :)

About a 1/2 inch thick; butterflied, steak seasoning, Vidalia onion, Popinki mushrooms and Swiss cheese all done on the grill and tossed on a good hard roll.
