I don't add any fat at all.  I grind it straight up, and it comes out fine!!

I dont mix anything in mine. If you like burgers, which is my favorite really, make them thinner and cook on a very hot pan at first. Cook for about 2 minutes or when the edges turn color and the juice starts to come up through the meat. Then flip and turn the heat all the way down for a minute then shut off. I add cheese or what ever else you want on it and once that is melted should be done and still juicy. no longer than five minutes.

MMMM burgers. I always mixed in lean ground beef in mine and use pork for the deer sausage.

I eat mine just straight up venison, I love it! make burgers, spaghetti sauce, and hamburger helpers with it all the time.

   didn't care for it straight up,  needs bacon,  maple or hickory needs that something extra  ;)

I do that with about 80% of my meat - straight up, great for tacos, hamburger, etc...  I see you are also rockin out the Kitchen Aid mixer/grinder  ;)  I had that thing almost to hot to touh the other night  :o
