corned venison anyone?

so i bought a brine and seasoning packet to make corned venison from a wildgame seasoning company. i submersed 8-10 lbs of prime hindquartes cuts in this solution and today is day 11 of the curing process. going to giv it a run tonight w some cabbage n taters. any one ever have, try, or make corned venison b4? ill hopefully update later w a great success story about how amazing it was or im gonna b one pi$$ed off feller if i wasted ten lbs worth of steaks. especially since they were off the little skipper billy buk.

I hope it turns out well Ramrod. My buddy and I just used an Eastman Outdoor Kit for summer sausage(Wal-Mart). It called for 15lbs of meat, it was his venison so I wasnt to worried. ;D It actually turned out really well and have had no complaints from anyone. Now I just need to take another deer so I can have some more.

amazing is an accurate word that i would use to describe the flavor. if you like corned beef then u will def  like corned ven. i will b buying at least 2 pkgs of brine at the next sportsshow. i highly reccomend it. it does not require a casing or tying the meat. i was worried it wood fall apart while boiling but it held together just fine.

It sounds delicious. I LOVE corned beef and was hoping to do something like this for sandwiches to bring to work. Thanks for sharing

I have a friend who makes that and pastrami for me, I'm actually in the process of making venison proscuitto

For the pastrami you use a salt sugar and cracked pepper cure for a week or so then smoke
Take a Kid outside...

so me and a few others have been saving all the football roasts from our deer this fall and decided to corn them instead of the better hq steak cuts. hoping it turns out as good as last year.  we have about 40 lbs or so curing. gonna be a long 10 days.
