Title: storing jerky?
Post by: SilentStalker on Nov 28, 2012, 11:18:53 AM
I've made jerky numerous times, but generally for an upcoming trip that was in the near future. (we all know there is never any leftover) This year I'd like to make more than usual and store it. What's the best storing method? Can i store them in canning jars? and if so, do they need to be sealed in the canning fashion?
And with whatever is advised, what amount of time can i expect the jerky to keep? Thanks in advance :D

Freezer. Make it as close to air tight as possible and freeze it. It will last a looooong time

I vacuum seal it and freeze it as well. Bag it up in quantitys for a daily hunting or fishing trip. Keeps just fine.

If made well it will keep easily refrigerated or not. I have left a loose ziploc bag in my hunting backpack over the off season and it was still fine the following fall. Have also left some in my ice fishing gear all summer and it was fine too. If you vacuum seal it you might want to put some wax paper in the bag, I've had vacuum bags get punctured from the jerky in the freezer.

I would be scared to not keep it refrigerated or frozen. That store bought stuff has an extra process that we do not have doing it at home I think.
