What do you do with your back straps I always just fry them in butter ,salt and pepper with onion or plain with eggs for breakfast.

Wrap in bacon, cook under broiler to crisp bacon. Finish to medium rare in at 300-350°.

Slice into steaks and grill.

Lightly Season with Montreal seasoning, cover with bacon, bake until medium rare (130 or so) slice it up about  1/2" each.  Incredible!

Slice 1/2" thick. Dredge in lightly seasoned flour and egg wash. Fry in butter or bacon grease and serve with sauteed onions and bacon next to a pile of home fries.  :)

About a 1/2 inch thick; butterflied, steak seasoning, Vidalia onion, Popinki mushrooms and Swiss cheese all done on the grill and tossed on a good hard roll.

The ways I eat them are endless. However, had I to choose a favorite......

Sanitorini style, served over mashed potatoes , with roasted red peppers, feta, and brown gravy ..... Oh and crab cakes and asparagus with bacon and mushrooms on the side  ;D
