What do you do with your back straps I always just fry them in butter ,salt and pepper with onion or plain with eggs for breakfast.

Slice into steaks and grill.

Lightly Season with Montreal seasoning, cover with bacon, bake until medium rare (130 or so) slice it up about  1/2" each.  Incredible!

Slice 1/2" thick. Dredge in lightly seasoned flour and egg wash. Fry in butter or bacon grease and serve with sauteed onions and bacon next to a pile of home fries.  :)

About a 1/2 inch thick; butterflied, steak seasoning, Vidalia onion, Popinki mushrooms and Swiss cheese all done on the grill and tossed on a good hard roll.

I cut the back strap in thirds and freeze until ready to be consumed.  I then cut  into 1 1/2 pieces, wrap in bacon and cook on the grill.  Sometimes I sprinkle on some garlic seasoning.  I cook for 2 1/2 minutes and turn 180 degrees, Cook for another 2 1/2 minutes them flip over repeating the process for the other side.  They turn out medium and taste great.
