A few nice Canada's Part 2
« on: Oct 21, 2005, 03:28:36 PM »
My Buddy Trevor and I got out last week as there were aproximately  600 Canadian Geese in one of our fields. We dug pits and it was the first time I hunted this way and I must say I am not going back to laying on my back. :P  Here are a few pics of our day.
Me with some birds

Heres Trevor

This is what kind of a night it was

We limited out 10 birds but we only picked these 7 because the rest didnt look good for in the pic and they were a little more shot up as there were a few wounded runners we had to shoot twice
Oh well they tasted awesome

You guys made out like bandits. Those are real good looking geese. How you prepare them for the table in your area?

They look like good size birds. Pit blinds are nice like you said, untill the birds know it's there and you need mobility. Good birds and if I may, how did you guys cook em up?

Ok Ok heres what I did to prepare them. I only took the breasts out of these birds as I still have some roasts in the freezer. Anyways I cut the breasts in half lengthwise. Next I pound the he!! out of them with a meat cleaver. After I thought they were to proper tenderness I let them souak with sugar and soya sauce over night. The next day I dumped on some Cattleman's BBQ sauce and soaked another night like this. I BBQed them up the following day and I couldn't believe how good them were. MY buddy's girlfriend that wont eat anything wild couldn't even tell that this was a goose. She thought it was beef untill we told her and she still kept eating it.  ;D  Give it a try Tasty

Thats the same thing I do with grouse except I just let them marinate in the BBQ sauce overnight and then throw them in a slow cooker for 3-4 hours. If you want to tender them up I would avoid the bashing with a meat cleaver and put some lemon juice in the mix. The acid from the lemon juice tenderizes the meat really well.
My marinade:
-BBQ sauce
-Lemon juice
-Worchestershire (wee bit)
-Tabasco (wee bit)
-(Anything else I feel like trying)
